GUYS. I have a present for you. A present in the form of carrots.
Now, I really don’t like carrots, like before I was able to fake being a grown-up I would actually gag while eating them. However, as an ‘adult’ I’ve realized how ‘healthy’ and super cheap they are, so I usually find some way to choke them down. BUT THEN along came this fantastic recipe, yes I may have set the smoke alarm off in the process ( definitely need to clean that oven) but the end result was amazing.
They were sweet! Literally sweet, I didn’t suddenly turn into a surfer. Roasting them at 2 different temperatures brought out the natural sugars and slightly caramelized them.
Check out the recipe here at Epicurious. Basically, you slice your cheap, orange abominations of nature into strips, cover in olive oil, salt and pepper. Roast for 20 minutes at 500 F then turn the oven down to 325 F and roast for another 25. THATS IT. How did I not know this before?
